Vietnamese Style spare ribs and noodles

I would have loved to include some pictures of the process and the final product but honestly, when I read the recipe, I thought it would be a mediocre style of ribs. So I didn't think the bother would be necessary. Boy was I wrong! These ribs are the best I've ever tasted! They are super easy too. The noodles that accompany the dish were also a huge hit. I had never attempted anything like those noodles before! Ok, so off to the recipe part.

Vietnamese Style Ribs

marniade:
1 stalk lemon grass (I use organic prepared lemon grass, makes things even easier!)
1/2 small onion, finely chopped
1 tbsp garlic
1 tsp ginger
pinch of fresh ground pepper
1 jar of garlic spare rib sauce
1/2 of rib sauce jar filled with water
1 tbsp lemon juice

Whisk ingredients together and pour over ribs (I precut mine), cover and marinate over night.

In the morning, Preheat oven to 300 and put ribs in a baking dish tossing them to coat in the sauce. Cover and cook about 8 hours. (I did mine at 375 for 2 hours, marinating often)

Noodles

Fill a large stove top pot with water, bring to boil and cook noodles according the package directions. Drain. While Noodles are draining continue with...

put:
2 tsp cooking oil in the pan that the noodles were cooked in, no need to wash the pot first.
2 finely chopped green onions
1 tsp garlic
1 tsp ginger
1/4 tsp curry powder
1/4 cup hoisin sauce
3 tbsp soy sauce

mix all together then add drained noodles and toss to coat over low heat. Once noodles are completely coated, add in 2 more finely chopped green onions.

Garnish with finely chopped cilantro and chopped up unsalted peanuts over ribs and noodles.
